Crispy Noodles with Tofu & Veggies - Paired with Thai Toast


Welcome To Shake Your Foodie!  Here's a recipe to kick us off!


Crispy Noodles with Tofu & Veggies - Paired with Thai Toast
-Jen's Creation (with some help from Jon)


Here's what you need:
    Crispy Noodles w/ Tofu & Veggies
  • 1 6oz Package Maifun Rice Sticks
  • 1 14oz Extra Firm Tofu
  • 6T. Sesame Oil
  • 1 Bag Shredded Coleslaw Mix
  • 1 Small Onion - Sliced
  • 6oz Sliced Mushrooms
  • 1T. Finely Minced Ginger
  • 1T. Finely Minced Garlic
  • Soy Sauce
  • Olive Oil

     Thai Toast
Recipe Compliments of Jen's dad, Jon Pierson.
  • 4 Thick Slices Any Healthy Bread
  • 2 Garlic Cloves
  • Natural Peanut Butter (Creamy or Chunky)
  • Chopped Cilantro
  • Kickin' Sauce!  (don't worry, we'll give you the recipe too!) 
    • 1/4c. Olive Oil
    • Cayenne Pepper (to taste depending how much you want your mouth to burn)



 Here's What You Do:
Crispy Noodles w/ Tofu & Veggies
-Deep fry Maifun according to package directions (please make sure you only fry small amounts at a time so they really puff up!) Then set aside on towel lined plate
-Cut tofu in 1in. chunks
-Heat sesame oil until very hot
-Brown tofu in sesame oil & a few shakes of Soy Sauce; adding Garlic & Ginger to the last 1 minute of cooking
-Remove from pan, put in a bowl & set aside
-In the same pan, add a bit of Olive Oil and Soy Sauce, cook Onions & Mushroom until crisp tender; Put in a bowl & set aside
-In the same pan add a tablespoon more of Olive Oil & Soy Sauce, cook shredded Cabbage about 4 minutes until crisp tender
          TO ASSEMBLE: Place 1 mound of Crispy Noodles on a plate, top w/ cabbage, onions, mushrooms & tofu.  Then garnish with cilantro (optional)
(Serves: 4)


Thai Toast
-Toast slices of Bread
-Rub 1/2 of a Garlic Clove over each slice (finely chop the rest)
-Spread Peanut Butter over toast
-Sprinkle with chopped Garlic & chopped Cilantro
-Drizzle with Kickin' Sauce!
(Serves: 4)
