Quinoa Stuffed Acorn Squash

Quinoa Stuffed Acorn Squash

Here's what you need: 
  • 2 Acorn Squashes
  • 1 c. Quinoa (pronounced KEEN-wa)
  • 1 1/2 packed c. fresh chopped Spinach
  • 1/2 c. Feta Cheese
  • 2 t. dried Thyme
  • 1 t. fresh ground Sea Salt
  • 1/2 t. fresh ground Pepper
  • Olive Oil
  • 1 slice Wheat Bread, crumbled into crumbs
 
Here's what you do:

-Preheat oven to 375 degree
-Cut acorn Squash into two, cleaning out the seeds
-Sprinkle with a bit of Salt & Pepper
-Place cut side down on a Pam sprayed baking sheet
-Bake for about 20 minutes or until fork pierced tender

-While squash are baking, cook 1 c. Quinoa in 2 c. water
-Transfer to a bowl when done & add the chopped spinach, feta cheese, thyme, salt & pepper & mix all together

-Divide the Quinoa mixture between the four squash halves
-Drizzle 1 t. Olive Oil over each
-Mix together the bread crumbs and 1 T. Olive Oil
-Top each Quinoa filled Squashed with bread crumbs

-Bake an additional 20 minutes until heated thoroughly & Bread Crumbs are browned
(Serves: 4)

To make this recipe Vegan, omit the Feta Cheese.

  1. Yum! Looks delish - I will definitely try it! My mom just gave me a package of Quinoa and I was looking for something to make with it! It can easily be made into a gluten-free version by using gf bread, gf cornflakes, or gf crackers in place of bread crumbs.
