Bruschetta

Bruschetta

Here's what you need:
  • Multi-grain bread, 6 to 8 pieces, sliced about 3/4 to 1 inch thick
  • Extra Virgin Olive Oil
  • Good tomatoes - about 3, diced (this recipe is the BEST with yummy summer tomatoes!)
  • 1 Onion, diced and browned in 2 T. olive oil
  • 1/4 to 1/2c. chopped fresh basil
  • Goat Cheese - about 6 ounces (I like to use the log style, but the crumbles also work)
  • Balsamic Vinegar
  • Fresh Ground Sea Salt & Pepper


Here's what you do:

-Place the browned onions, diced tomatoes, goat cheese & basil in small bowls 
-Heat a large pan on high, then turn down to medium/high
-Drizzle about 1 T. Olive Oil on each side of Bread slices, then brown.  This takes a few minutes each side depending on how toasted you want your bread.  Put the finished bread on a plate.


To Assemble:  
Spread desired amount of goat cheese on hot bread.
Top with onions, tomatoes, basil then drizzle with Balsamic vinegar to taste.
Grind desired amount of Pepper & Sea Salt.


Our family absolutely loves this recipe and we make it often!  It is wonderful accompied with some good cheeses, grapes and a glass of red wine.
